A layer of sweet homemade blackberry jam elevates the flavor and decadence of this bacon and Brie grilled cheese. The jam is so easy to make, you may be tempted to add it to just about anything. You name it, you’re jamming it!

Ingredients
1 tablespoon water
1 tablespoon cornstarch
3 packages (6 ounces each) Driscoll’s Blackberries, divided
1/2 cup sugar
Zest of 1/2 medium lemon
Juice of 1/2 medium lemon
2 slices bacon
1 tablespoon butter
2 slices thick-cut sourdough bread
3 slices Brie
2 tablespoons shredded white cheddar, Emmental, or fontina cheese
3 – 4 fresh basil leaves

POUR 1 tablespoon water into a small bowl.

ADD 1 tablespoon cornstarch.

STIR to combine.

SET ASIDE cornstarch mixture.

PLACE 2 packages (6 ounces each) blackberries into a saucepan.

ADD 1/2 cup sugar.

ADD zest of 1/2 medium lemon.

ADD juice of 1/2 medium lemon.

COOK over medium heat about 10 minutes and STIR and MASH occasionally.

STIR cornstarch mixture and ADD to blackberry mixture.

INCREASE temperature to high and STIR frequently until mixture comes to a boil and thickens.

SET ASIDE blackberry jam.

PLACE heat-proof skillet into oven.

PREHEAT oven to broil.

COOK 2 slices bacon until crispy and SET ASIDE.

REMOVE skillet from oven.

PLACE 1 tablespoon butter into skillet and SWIRL.

PLACE 2 slices thick-cut sourdough bread into skillet and ALLOW to toast on 1 side until golden, 1 – 2 minutes.

SPREAD thin layers of blackberry jam on each bread slice.

REFRIGERATE remaining jam and USE within 2 weeks.

PLACE 3 slices Brie onto 1 bread slice.

PLACE 2 tablespoons shredded white cheddar, Emmental, or fontina cheese onto second bread slice.

RETURN skillet to oven and BROIL until cheese is melted.

REMOVE skillet from oven.

ADD cooked bacon.
