Description
Katie Workman, author of The Mom 100 Cookbook, created these peanut butter and "jelly" roll ups with a fresh, no-cook berry mash. Not only will you enjoy the bright flavors of the berries but no sugar is added like in traditional jams or jellies. Add any or all of the optional mix-ins for added flavor and texture.
- 1/4 Cup peanut butter, or almond butter
- 1 Cup Driscoll's Berries, such as raspberries, blackberries, blueberries, or sliced strawberries
- 2 8-inch whole wheat flour tortillas
-
Lay one tortilla on a flat surface and spread 2 tablespoons of peanut butter, or almond butter on the tortilla, leaving about ½-inch border all around.
-
Sprinkle ½ cup of berries over the peanut butter/ almond butter (leaving one inch of the peanut butter/ almond butter on one edge uncovered), and use a fork to gently crush the berries, mashing them into the peanut butter/ almond butter. Sprinkle any add-ins over the crushed fruit, and roll up the tortilla working towards the berry-free edge, and using the peanut butter/ almond butter to seal the wrap.
-
Slice the roll-up as you like.
