Serve these delicious and adorable raspberry Brie bites at your next holiday party! Made with fresh Driscoll's Raspberries, they’re easy to assemble and have a lovely contrast of textures and flavors. Creamy, salty, and sweet all in one bite! Keeping them on a wire rack once they’re baked will help to preserve their crispness.

Ingredients

2 packages (6 ounces each) Driscoll’s Raspberries, divided

1/4 cup sugar

Juice of 1/2 lemon

30 phyllo shells, purchased

8 ounces Brie

Hot honey

Fresh thyme leaves


Directions

PLACE 1 package (6 ounces) raspberries into a medium saucepan.

ADD 1/4 cup sugar.

ADD juice of 1/2 lemon.

COOK and STIR frequently over medium heat until raspberries are broken down and mixture is reduced to about 1/2 cup.

SET ASIDE raspberry jam to cool.

PREHEAT oven to 325°F.

ARRANGE 30 phyllo shells on a baking sheet.

DIVIDE raspberry jam equally between phyllo shells.

CUT Brie (8 ounces) into half-inch cubes.

DIVIDE Brie cubes evenly between phyllo shells.

BAKE 6 – 8 minutes until Brie is melted and phyllo shells are golden brown.

TRANSFER to a wire rack.

DRIZZLE appetizers with a small amount of hot honey.

GARNISH appetizers with remaining 1 package (6 ounces) raspberries.

DRIZZLE a small amount of hot honey over raspberries.

GARNISH appetizers with fresh thyme.

SERVE immediately.

Appetizers can be prepared up to 3 hours ahead of time. Fill with jam and Brie, cover with plastic wrap, and refrigerate until ready to bake.
