Description
The world is quickly catching on to Dalgona coffee, a sweet delight that comes to us from India via South Korea. Our version of this rich, fluffy coffee floats atop a perfectly blended strawberry milk you make from scratch using fresh berries. The drink is easy to make, which is perfect because you’ll be tempted to have some every day.
- 1/2 of a 16-ounce package Driscoll’s Strawberries, hulled and chopped
- 1/4 Cup plus 2 tablespoons granulated sugar, divided
- 1/4 Cup water
- 2 Cups whole milk (or milk of choice)
- 2 Tablespoons instant coffee
- 2 Tablespoons water, boiling
- ice

PLACE strawberries into a small saucepan.

ADD 1/4 cup sugar and 1/4 cup water.

BRING to a boil.

SIMMER, and STIR occasionally, for 5-7 minutes until liquid is reduced and strawberries are broken down.

PRESS strawberries through a fine mesh strainer to COLLECT strawberry syrup.

DISCARD strawberry solids or SAVE for future uses such as in yogurt.

ALLOW syrup to cool slightly then STIR into 2 cups milk.

SET ASIDE strawberry milk.

PLACE remaining 2 tablespoons granulated sugar into a medium bowl.

ADD 2 tablespoons instant coffee and 2 tablespoons boiling water.

WHIP mixture using a whisk or hand mixer for 2 – 4 minutes until light, smooth, and fluffy.

SET ASIDE whipped coffee.

DIVIDE strawberry milk between two tumblers.

ADD ice as desired.

TOP with whipped coffee.

GARNISH with additional strawberries as desired and SERVE immediately.
