Enjoy the sweet days of summer with our very berry limoncello spritz. This simple, refreshing, and gorgeous aperitif hails from Italy, but you don’t have to hop on a plane to enjoy this delicious cocktail. Berry ice cubes are optional, but they’re easy to make and fun to use! Make them a day ahead to give them time to freeze.

Ingredients
Berry ice cubes (optional)
4 – 6 Driscoll's Strawberries, cored and cut into cubes
1 cup mixed Driscoll’s Blackberries, Driscoll’s Blueberries, and Driscoll’s Raspberries
Cocktail
8 – 10 Driscoll's Blueberries
3 Driscoll's Raspberries
2 – 3 Driscoll's Strawberries, cored
2 ounces (about 4 tablespoons) limoncello
3 ounces (about 6 tablespoons) sparkling wine
1 ounce (about 2 tablespoons) sparkling water
Fresh mint leaves
Berry ice cubes (optional)

DIVIDE 4 – 6 cored and cubed strawberries between wells of an ice cube tray.

DIVIDE 1 cup mixed blackberries, blueberries, and raspberries between ice cube tray wells.

ADD cold water to cover berries.

PLACE ice cube tray into freezer and CHILL until frozen.

PLACE 8 – 10 blueberries into a tall drinking glass.

ADD 3 raspberries and ADD 2 – 3 cored strawberries.

MUDDLE (or MASH with a large spoon) until berries are pureed.

PRESS puree through a fine strainer and DISCARD solids.

TRANSFER puree to a cocktail shaker.

ADD 2 ounces (about 4 tablespoons) limoncello.

FILL cocktail shaker with ice.

FIT lid onto cocktail shaker and SHAKE until shaker is well frosted.

SET ASIDE cocktail shaker.

FILL tall drinking glass with berry ice cubes or with ice.

POUR mixture from cocktail shaker into tall drinking glass.

ADD 3 ounces (about 6 tablespoons) sparkling wine.

ADD 1 ounce (about 2 tablespoons) sparkling water.

STIR cocktail.

GARNISH with additional blueberries, raspberries, and strawberries.
